Superbowl Recipe – Outlaw Ribs

To celebrate Superbowl Sunday, I thought it might be appropriate to re-post my rib recipe!  They don’t need to be put on the grill. These are my brother-in-law’s ribs. They’re so good they oughta to be outlawed!!

Outlaw Ribs


Ingredients
1 Slab of baby back ribs.
1 /2 Cup Apple Cider Vinegar
1/2 Worcester Sauce
1 Cup McKormick Pork Rub
1/4 Cup Brown Sugar
Sweet Baby Ray’s Honey BBQ Sauce

Instructions

  1. Add Apple Cider and Worcester Sauce to large pot of water. Boil Rib for 1/2 hour. Remove from pot, let cool a little.
  2. Pre Heat oven to 400 degrees.

The Rub

  1. Mix together Pork Rub, and brown sugar. Shake over ribs until ribs are covered with rub. Put in a pan and cover with foil. TURN OVEN OFF!! Put Ribs in oven for 3 hours.
  2. Grill Ribs (optional) and add BBQ sauce.
    Makes 6 Servings

Grilled avocado with melted cheese and hot sauce

Grilled Avocado w Melted Cheese & Hot Sauce

Serves 1 as a snack.

Ingredients:
1 avocado
1 tablespoon chipotle sauce (Tabasco or Louisiana)
1 tablespoon lime juice
¼ cup parmesan cheese
Salt and pepper

Method:

1. Slice the avocado in half and remove the stone. Prick all over with a fork, or cut criss-cross patterns with a knife. This allows the sauce to penetrate the flesh.

2. Pour the sauce over each half, then top with lime juice and salt and pepper.

3. In the cavity where the stone has been, put ¼ of the cheese on each avocado half. Place under the hot grill for 2 minutes.

4. Top with remaining cheese and grill (broil for Americans!) for another 2 minutes until completely melted and avocado warmed through.

Eat hot with a wedge of lime and chipotle sauce on the side!

    • 1 Slab of Baby Back Ribs (from Costco)
    • 1/2 Cup Apple Cider Vinegar
    • 1/2 Worcester Sauce
    • 1 Cup McKormick Pork Rub
    • 1/4 Cup Brown Sugar
    • Sweet Baby Ray’s Honey BBQ Sau

Instructions

    1. Preheat the oven to 400F. Add Apple Cider and Worcester Sauce to large pot of water. Boil Ribs in a large pot for 1/2 hour. Remove from pot, let cool a little.

  • Rub

    2. Grill Ribs and add BBQ sauce.
    3. Makes 6 Servings

Chicken Wings Pacifica

Yield

5 to 10 servings


Ingredients

    • 3 pounds chicken wings
    • 1 cup soy sauce
    • 1 cup packed brown sugar
    • 1/2 cup butter
    • Garlic
    • 1 teaspoon mustard powder
    • 3/4 cup water

  • Instructions

      1. Disjoint the chicken wings, discarding the tips.
      2. Combine the soy sauce, brown sugar, butter or margarine, mustard and water and heat until the sugar and butter dissolve. Let mixture cool and pour over wings. Marinate in the refrigerator for 2 hours, or more turning occasionally.
      3. Grill chicken wings until done, turning and spooning marinade over chicken occasionally.
      4. Serve
