Cucumber Tomatoe Salad

We visited wonderful friends this evening for dinner. The husband is from Iran, and a wonderful chef. He showered us with lentils, homemade hummus, chicken kabob, and rice. The cucumber salad was wonderful, and I wanted to share the recipe.

3 cucumbers chopped (spin the water out)
3 tomatoes chopped (seeded)
Cilantro chopped
Lettuce finely chopped
1 Red Bell pepper chopped (saute in a bit of olive oil for a few minutes)

1/3 cup Olive oil
1 Tbsp. Lime juice
Salt (pinch)
Sugar (pinch)

Put all vegetables in a colander. Let sit for half an hour so that all the juices drain. Transfer to a salad bowl. Mix dressing ingredients and toss with salad. Serve with hummus, pita bread, and a white Pinot Grigio.
